Thomas Johns, Executive Chef
“Stars in Waiting” read the article published about Thomas Johns when Sydney Morning Herald Good Living profiled “Top ten chefs to watch out for”.
For the second year in a row, Thomas was awarded two prestigious ‘Chefs Hats’ by the SMH 2007 Good Food Guide where he received 16/20. Thomas has cemented his reputation and has continued to deliver every year since he took on the role as Head Chef in 2001 when he received his first ‘Chefs Hat’. He also received one black star in the Australian Gourmet Traveller Restaurant Guide 2004 & 2005.
When Thomas first became Head Chef of Pello he decided to introduce a refreshing twist to the customary Italian or Italian influenced menus on offer at Stanley Street with his menu featuring Modern European cuisine.
With the continued success of Pello in the highly competitive Stanley St food precinct, 2004 has seen Thomas take control of not only the kitchen but also all operations as new restaurant owner.
Trained in London and with over 15 years experience as a qualified chef, Thomas came to Australia in 1993 and has built his reputation as an exciting new talent in the Sydney restaurant scene.
Prior to Pello, Thomas played a key role as Sous chef at leading "Two Hat" Aria Restaurant (Circular Quay), working closely with executive chef Matthew Moran.
As chef/owner of Pello, Thomas’ goal is to maintain his two chef’s hat status by consistently offering high standards in food, wine and service.
